Oh yum! Drool. I must visit you. I have to say my batter doesn't stand up to inspection or photography. In fct it doesn't rise at all lately. Not sure what's going on. I think I try to reproduce a Yorkshire experience a (Welsh) great-aunt baked on memorable occasions. She put the mixture under the roast for the last half hour so it was delectably soaked in juices. That made it rather soggy and flat in the middle but AMAZING to the taste. Restaurant Yorkshires are such a disappointment. They look as if they've been blown up with a bicycle pump and are like tough cardboard to eat.
